Roles and Responsibilities of the Cooks
1. The cooks should be familiar with the menu and ensure that appropriate supplies are available for the meals.
2. The cooks are responsible for sanitary conditions, food safety, and proper methods in the preparation and serving of the food.
3. The clean-up of the dining hall, including the kitchen, should be under the direction of the cooks.
4. The cooks are compensated financially by the camp.
Cook's Duties After Each Meal
Clean front counter
Wipe sneeze guard
Wash and dry all dishes and utensils
Wipe off freezers and drink cart
Empty kitchen trash
Mop the kitchen floor after evening meals
Camp Director's Kitchen Check-Out Sheet (To be completed by the cooks before leaving for the week)
Empty and Clean Fryer.
Empty and clean grease trap on grill. Use the grill block to clean and put a thin layer of oil on top.
Wipe all shelves.
Wipe outside and inside of refrigerator.
Empty refrigerator of miscellaneous items that will not be used by the next week of camp.
Empty shelves of all miscellaneous items that will not be used by the next week of camp.
Clean staff bathrooms.
Clean cook's quarters and bathroom, including sweeping and mopping.
Sweep and mop kitchen and dining hall.
